Tested using SCRATCH_DIR=/tmp/crd-ref-docs-tmp CLEANUP=false REFDOCS_VER=f45e4f357b351f790bd990c221276f26128e7503 ./build.sh in https://github.com/elastic/cloud-on-k8s/tree/main/hack/api-docs, seems to work as expected.
