chore: Ensure query params callback is set before connection

Focuses on test setup for dynamic query parameters.

• Refactors multiple examples in spec/client_spec.rb to instantiate client = subject.new(...) { |c| c.query_params { ... } } and then call with_client(client) so callbacks are configured before the connection starts
• No production code changes
